Ingredients:
2 large aubergines, pricked all over with a fork
1 tablespoon olive oil
1 large onion, thinly sliced
1 teaspoon garlic powder
2 teaspoons smoked paprika
1 tablespoon demerara sugar
1 teaspoon dried oregano
5 tablespoons barbecue sauce
400 grams can black beans, drained and rinsed
4 burger buns, toasted and lightly buttered
Red onion or pink pickled onion, shredded lettuce, coleslaw, and corn on the cob, for serving (optional)
Instructions:
Grill the aubergine: Preheat your grill to high heat. Grill the aubergines whole, turning occasionally, until blackened and soft all over, about 20-30 minutes. Set aside to cool slightly.
Sauté the onion: While the aubergine grills, heat the olive oil in a large ovenproof pan over medium heat. Add the sliced onion and cook until softened and golden brown, about 10 minutes.
Prepare the aubergine and combine the mixture: Once cool enough to handle, peel the skin from the aubergines and discard it. Roughly chop or scoop out the flesh with a spoon. Add the chopped aubergine to the pan with the softened onion. Stir in the garlic powder, smoked paprika, demerara sugar, dried oregano, salt, and pepper. Let it cook for a minute, allowing the flavors to meld.
Simmer and bake: Next, add the BBQ sauce and drained black beans to the pan. Season with additional salt and pepper to taste. Stir well to combine everything. Transfer the pan to a preheated oven at 200°C/180°C fan/gas mark 6. Bake for 10-15 minutes, until the sauce thickens and the mixture resembles pulled pork.
