Ingredients:
For the Filling:
1 kg (2 lb 4 oz) Bramley apples, peeled, cored, and cut into small cubes
½ lemon, juice only
1 teaspoon ground cinnamon
1 teaspoon ground ginger
85 g (3 oz) light brown sugar
2 tablespoons plain flour
75 g (2 ¾ oz) raisins
For the Crumble Topping:
55 g (2 oz) pecan nuts, roughly chopped
100 g (3 ½ oz) plain flour
55 g (2 oz) rolled oats
85 g (3 oz) light brown sugar
85 g (3 oz) vegan margarine, cut into small cubes
Instructions:
Preheat the Oven: Preheat your oven to 220°C/200°C Fan/Gas 7.
Prepare the Apple Filling: In a 24cm (9½in) square baking dish, combine the cubed Bramley apples with the lemon juice, cinnamon, ginger, sugar, flour, and 100ml (3½fl oz) water. Stir to coat the apples evenly.
Make the Crumble Topping: In a mixing bowl, combine the pecan nuts, plain flour, rolled oats, light brown sugar, and vegan margarine. Using your fingertips, rub the margarine into the dry ingredients until the mixture resembles breadcrumbs.
Assemble and Bake: Spread the apple mixture evenly in the prepared baking dish. Sprinkle the crumble topping generously over the apple filling. Bake in the preheated oven for 30 minutes, or until the apples are completely soft and the crumble topping is golden brown.
Serve: Let the vegan apple crumble cool slightly before serving. Enjoy warm with a scoop of vegan vanilla ice cream or a dollop of whipped coconut cream.
Tips:
For a more intense cinnamon flavor, increase the amount of ground cinnamon in the apple filling.
Feel free to substitute other types of apples, such as Granny Smith or Honeycrisp, for a different taste experience.
Add a handful of chopped walnuts or almonds to the crumble topping for a nutty crunch.
Serve with a dollop of vegan custard or a drizzle of maple syrup for extra sweetness.
Enjoy this sensational vegan apple crumble!
